Spinach Salad with Cranberries & Pecan

Spinach Cranberry Saladspinach-saladSpinach, sweet cranberries, apples, roasted pecans and a creamy gorgonzola!! This all melts in your mouth, with yummy crunchiness!! This salad is one of my favorite salads to make, it is quick, easy, and full of flavors! I don’t get too fancy with the salad dressing, as i only use olive oil and balsamic vinegar. Chitta, a dear friend of mine, makes this salad frequently for her husband Swarup, who has a soft food diet (excluding the nuts) and loves to use raspberry dressing for this type of salad, so you can also experiment with berry dressings.

Cranberry Pecan Spinach Salad
1 Tb of butter
3/4 cup of pecans (or almonds, walnuts…)
1 pound spinach, rinsed and torn into bite-size pieces
3/4 cup of cranberries
1 medium apple sliced in quarters
salt and fresh cracked pepper to taste
a drizzle of olive oil and balsamic vinegar

In a medium saucepan, melt butter over medium heat and add pecans stirring until lightly toasted. Remove from heat, and let cool in a plate. In a large bowl, combine the spinach with the toasted pecans, apples and cranberries. Serve it on a plate and add the gorgonzola cheese on top and drizzle olive oil and balsamic vinegar. Personally i don’t really like too much balsamic so i only drizzle maybe like 4 drops, just for taste. Finally crack some fresh pepper on it and salt it. Enjoy!!!

      Yayyy Krisna Vani! Let me know if you guys liked it, if the gorgonzola cheese is too strong you can use feta cheese instead. 🙂 besos!

        OMG!!!! This salad is out of this world. I had to put raw blue cheese because the gorgonzola had animal rennet. Jalu added some drops of lemon and he loved it even more. Thanks again Dhani!!! Lots of besitos

          Thank you! Yes this salad is great and easy to make. You can find gorgonzola with out rennet in the brands “Stella” and “Treasure Cave” so you can try it like that next time 🙂 un abrazo cutie!
