Broccoli Delight!

This creamy broccoli and almond soup is one of my favorite soups that is delightful and very healthy. I was recently in San Diego and stayed at a dear girlfriend’s house, she is a beautiful mother, great cook & cancer survivor. I was telling her about this soup that is convenient to make if you are in a hurry, feeling tired, or in need of magical power for your brain 🙂 this dish is perfect for creating a delicious and nutritious soup! A bonus to it is: that it’s creamy from the roasted almonds and cauliflower…. oh yeah!!!

Broccoli & Almond Soup

2 tbsp of coconut oil
1/2 cup of almonds
1 broccoli head, cut into florets
1/2 cauliflower head, cut into florets
2 celery sticks, diced
1 zucchini, cubed
1/2 onion, cubed’
1/4 tsp grated nutmeg, optional

Heat 1 tbsp of coconut oil in a small saucepan on a low flame and add the almond slivers. Stir them for a couple of minutes until they are golden. Meanwhile heat another pot with the other TB of oil and add broccoli, cauliflower, celery, onion and zucchini. Stir on a high flame for a few minutes, till you can smell the scent of the roasted vegetables. Fill the pot with water until the vegetables are covered with it. Add the roasted almonds and boil for 10 minutes or until vegetables are tender. And blend everything until it’s nice and creamy. Pour the creamy broccoli soup back to the empty pot, add salt and crack some fresh pepper. To give it a lil’ kick i like to grate some nutmeg into it. 🙂 enjoy!
